Malaysian Satay blend is full of peanuts and can be used as a dry rub for grilling, BBQ or alternatively blend with light coconut milk for a great sauce.
Ingredients – peanuts 25%, mustard seeds, garlic powder, onion powder, lemon peel, lemongrass, salt, herbs, spices and NO NASTIES
2 chicken breast fillets, cubed, 1 sliced onion, 500g seasonal vegetables chopped, 2 tablespoons spice mix, 100ml chicken stock or water, 200ml coconut milk, 2 tablespoons corn flour
Brown onions in a wok, add chicken pieces and brown, in a large jug mix stock, cream, coconut milk, spice blend and corn flour and whisk together, add to wok and simmer for 1 minute. Add vegetables and cook further 10 minutes. served with steamed rice or cooked hokkien noodles
